Rossanos pizzas | Our Story

A little food truck, A lot of heart
Our story started in 2021, during COVID, with a food truck and a big love for pizza. Even during uncertain times, we wanted to bring people together over something simple and delicious. What started as a small dream grew into something much bigger, thanks to the people who showed up, shared a slice, and became part of our story.

A New beginning, built by our community
After a car accident changed our path, we faced the challenge of starting again. But we weren’t alone. In 2021, our Delray Beach community rallied around us and helped us rebuild our current food truck, turning a difficult chapter into a reminder of what can happen when people come together.

Built with love, still here because of you
That support is a big part of why our Airstream is still parked on North Federal Highway today. We’ve never forgotten the people who helped us get back on our feet, and we carry that gratitude into everything we do. This little spot means more to us than serving pizza. It represents friendship, resilience, and a community that believed in us when we needed it most.
Our friend and muralist, Maximiliano Bagnasco, is also part of this story, adding his own artistic touch to a place filled with memories and meaning.

The man behind the Pizza
Marcelo is our owner and pizzaiolo, with Italian roots, a childhood in Uruguay, and 15 years of calling Delray Beach home. He brings all those influences to the pizza he makes and the hospitality he shares with every guest.
Stop by, say hello, and stay for a story or two. Marcelo loves meeting people, and there’s always a little more behind the pizza than what you see on the plate.

Great pizza starts long before the oven
For Marcelo, great pizza is all about the details. He uses imported Italian 00 flour and pays close attention to the water, fermentation time, and how the dough is handled. Add San Marzano tomatoes and our Italian pizza oven, and you get a light, airy crust with just the right char.
It takes time, care, and a little bit of love to get it right. And after everything it took to get us here, we wouldn’t make it any other way.
